1. FAMILY HOUSE

🇵🇷STEWED CRAB: In a steel pot, combine pickled red pepper, tomato paste, seasoning mix with cilantro and annatto, additional seasoning (yellow packet – chicken seasoning), chopped cilantro, chopped cilantro, green olives, and garlic paste. Heat the mixture on the stove. Once it’s warmed, incorporate shredded crab.
🇵🇷MASHED PLANTAIN: Using a pestle and mortar, mash garlic and salt together. In a separate step, mash chicharrón. Additionally, slice and cut both green and yellow plantains for preparation.

2. RIVERBED
🇵🇷CAYMAN TACOS: Filet the Cayman tail, then dip it in an egg wash and coat with flour. Lightly fry the filet. Warm a flour tortilla and place the fried cayman tail in it. Top with chipotle mayo sauce and cabbage.
🇵🇷SHRIMP PAELLA
🇵🇷GRILLED CAYMAN: Cover in salt and pepper to season. Place in homemade roaster for 3 hours
