BEST Lemon Creme Brulee 🍋 (made with fresh lemon juice!)
This lemon crème brûlée is perfectly tangy and creamy, made with fresh lemon juice and zest! The refreshing lemon custard filling is a perfect match with a crispy caramelized sugar topping. I’m sharing tips and tricks for making it successful!
📌 Ingredients For Lemon Crème Brulée
For 5 ramekins
• Granulated sugar – 66 g (1/3 cup)
• Lemon zest – 1 lemon
• Cornstarch – 2 tsp
• Egg yolks – 105 g (From 6 eggs)
• Honey – 20g or 1 Tbsp
• Lemon juice – 50 g or 3 Tbsp + 1 tsp
• Heavy cream – 480 g (2 cups)
• Vanilla beans – 1 pod (or vanilla extract 1/2 tsp)
• Whole milk – 120 g (½ cup)
• Granulated sugar for caramel – 1 1/2 teaspoons
Bake at 300ºF (149ºC) for about 40 minutes.
* The filling should jiggle just slightly when tapping the sides of ramekins.
NOTE: For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements (US customary units) are provided for your convenience.
