BROCCOLI NUGGETS RECIPE
2 cups broccoli, finely chopped (250g)
1 cup rolled oats, processed (100g)
1 cup cheddar cheese, grated (100g)
3 eggs
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1 cup ground turkey (200g)

GREEK YOGURT TARTAR SAUCE:
1.5 cups Greek yogurt
1/4 cup pickles, grated
2 tbsp capers, chopped
1/4 tsp salt
1/8 tsp black pepper
2 tsp dill, fresh or dried

NUTRITIONAL INFO (per nugget):
66 calories, fat 3.7g, carb 3.8g, protein 4.3g

Instructions:
Cut the broccoli into florets and pulse in a food processor a few times until you get coarse pieces. Steam the processed broccoli for about 5 minutes until tender but not mushy. Set aside to cool slightly.

In a large bowl, combine the steamed broccoli, processed oats, grated cheddar, beaten eggs, salt, pepper, garlic powder, and ground turkey.

Mix gently with your hands or a spoon until just combined — avoid squeezing too much to keep the texture light. Let the mixture rest for 30 minutes so the oats can absorb some moisture.

Preheat a skillet over medium heat with a light drizzle of olive oil. Scoop portions of the mixture using a spoon and gently drop them onto the skillet. Shallow fry for a few minutes per side until golden, crispy, and cooked through.

In a small bowl, mix together the Greek yogurt, grated pickles, chopped capers, salt, pepper, and dill. Stir until well combined.

Serve the warm broccoli nuggets with the homemade tartar sauce on the side. Enjoy as a snack, lunch, or dinner!
