HEALTHY CHOCOLATE BABKA RECIPE
Ingredients:
2.5 cups (300g) whole wheat flour
1 packet (7g) instant dry yeast
1/2 tsp salt
2 eggs
1/4 cup (60ml) milk (dairy or non-dairy)
1 tbsp maple syrup, honey, or agave
1/4 cup (60g) room-temperature butter
1/2 cup (90g) dry dates
50ml hot water
1/4 cup (25g) cocoa powder
1/4 cup (65g) unsweetened applesauce
1/2 tsp cinnamon

For the dough, in a bowl, whisk together the whole wheat flour, instant dry yeast, and salt.
In a separate bowl, whisk the eggs, milk, and your choice of sweetener.
Combine the wet ingredients with the dry ingredients and mix with a spoon until the dough starts to come together.
Knead the dough for about 10 minutes, adding small pieces of butter one at a time, until the dough is silky and smooth.
Cover the dough and let it rise for 1 hour.
For the filling, in a jar, soak the dry dates for 15 minutes.
After soaking, add the cocoa powder, applesauce, and cinnamon to the jar. Use a hand blender to process the ingredients into a smooth paste.
Once the dough has doubled in size, transfer it to a clean countertop, and roll the dough out into a large rectangle.
Spread the prepared filling evenly over the dough, and gently roll the dough into a log.
Cut the dough in half lengthwise, flip one piece over the other, and twist the babka into its traditional, twisted shape.
Transfer the shaped babka to a lined loaf pan. Cover and let it rise again for 45 minutes.
Preheat your oven to 350°F (180°C). Bake the babka for 30-40 minutes, or until it’s golden brown and cooked through.
Allow the babka to cool slightly, then cut it into slices.
