BLUEBERRY PIE BARS RECIPE
For the crust:
1.5 cups oat flour, or processed oats (150g)
1 cup rolled oats (100g)
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 stick cold butter (60g)
1/4 cup unsweetened applesauce (60g)
2 tbsp maple syrup or agave
For the filling:
3 cups fresh blueberries (500g)
2 tbsp maple syrup or agave
2 tbsp tapioca or cornstarch
1 tbsp lemon juice

NUTRITIONAL INFO (per piece):
208 calories, fat 8g, carb 35g, protein 5g

Instructions:
In a large mixing bowl, combine oat flour, rolled oats, baking powder, cinnamon, and salt.

Grate the cold butter directly into the bowl and use your fingertips to gently work it into the dry ingredients until evenly distributed.

Stir in the applesauce and maple syrup using a spoon until the mixture starts to come together. Use your hands to finish mixing — the dough should be soft but slightly crumbly.

Lightly press a little more than half of the dough into the bottom of an 8×8 inch (20×20 cm) baking dish lined with parchment paper. Set the remaining dough aside for the topping.

In the same mixing bowl (no need to wash it), add the blueberries, maple syrup, starch, and lemon juice. Stir gently to combine.

Spread the blueberry mixture evenly over the crust. Crumble the remaining oat mixture over the top.

Bake in a preheated oven at 350°F (180°C) for 45 minutes, or until the top is golden and the filling is bubbling through the edges.

Let the bars cool in the pan for at least 1 hour before slicing into 9 squares. The longer they cool, the cleaner they slice.
