HEALTHY CHOCOLATE CAKE RECIPE
Ingredients:
For the cake:
1 cup oat flour, or ground oats (100g)
1 cup spelt flour (125g)
1/2 cup cocoa powder (50g)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1/2 cup unsweetened applesauce (130g)
1/4 cup maple syrup or agave (60ml)
1/4 cup melted butter (60ml)
1 cup buttermilk (240ml)
1/2 cup hot water (120ml)
For the glaze:
1/2 cup full-fat coconut milk (120ml)
2 tbsp cocoa powder
2 tsp vanilla extract
1/4 cup buttermilk (60ml)
3 tbsp maple syrup or agave

NUTRITIONAL INFO (per large slice):
280 calories, fat 12g, carb 37g, protein 8g

Instructions:
Preheat your oven to 360°F (180°C). Grease a baking pan with butter and set it aside.

In a large mixing bowl, whisk together the oat flour, spelt flour, cocoa powder, baking powder, baking soda, and salt until well combined.

Add the eggs, applesauce, maple syrup or agave, melted butter, and buttermilk to the dry ingredients. Mix until smooth and well combined.

Gradually pour in the hot water, stirring gently until the batter comes together. Be careful not to overmix.

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and allow it to cool completely in the pan, about 1 hour.

In a small saucepan over medium heat, whisk together the coconut milk and cocoa powder. Stir for about 2 minutes, until smooth and heated through.

Remove the saucepan from the heat and stir in the vanilla extract, buttermilk, and maple syrup or agave. Mix well, then let the glaze cool and thicken for 15–20 minutes.

Once the cake has cooled, use a fork or wooden skewer to poke small holes all over the surface.

Pour the glaze evenly over the cake, spreading it with a spatula to cover the entire surface.

Allow the glaze to soak into the cake for at least 30 minutes. For best results, let the cake rest for a couple of hours to allow the flavors to meld and for maximum moisture.
