HEALTHY BREAD RECIPE
Ingredients:
1/2 cup chickpea flour (60g)
1/2 cup oat flour, or ground oats (50g)
1 cup water (240ml)
1 tsp salt
2 tbsp olive oil

NUTRITIONAL INFO (per bread):
627 calories, fat 34g, carb 60g, protein 18g

Instructions:
In a large bowl, sift the chickpea flour, then add the oat flour. Whisk together until well combined.

Slowly pour in water while whisking until a thin batter forms. Cover the bowl and let the batter rest for at least 3 hours to allow the chickpea flour to fully hydrate.

After resting, add the salt and 1 tablespoon of olive oil. Whisk well to incorporate.

Preheat your oven to 450°F (220°C). Place a cast iron or oven-safe skillet on the stovetop and heat until smoking hot. Add 1 tablespoon of olive oil, swirling to evenly coat the bottom of the skillet.

Pour the batter into the hot skillet and transfer to the oven. Bake for 20 minutes, or until the top is golden brown and the edges pull slightly away from the pan.

Using a spatula, transfer the bread to a wire rack and let cool for a few minutes. Slice and serve warm or at room temperature.
